I buy a lot of hot sauces. I love hot sauces. My digestive system however appears to be siding with Mrs. Questionable more and more these days. Regardless, new bottles of hot sauce continue to make their way into my home — I’m a sucker for a great looking label and bombastic flavor descriptions. I’m not a cover everything in hot sauce kind of guy. I like to find a hot sauce that complements the flavor of whatever I’m eating. Just the right sauce to add to my tacos or pour over my eggs or as the perfect tortilla chip dip. I value flavor over heat, but if you want to stick around my kitchen, taste great AND make me sweat, I want my mouth dancing for at least 15 minutes after I stop eating.

My favorite hot sauce is made at a Tex-Mex restaurant, a salsa verde you have to ask the waiter for. A bright green, creamy emulsion that tastes like liquid cilantro, lime and fire (habanero peppers). Green Belly is the closest bottle I’ve found to that flavor, minus the heat since it's made with jalapeños.

I got my first bottle of Green Belly from my local hot sauce dealer, but this Boulder, CO-based sauce is available online directly or from Amazon for about $12 a bottle. I’m a repeat customer, my belly be damned.
